 LAVERSTOKE DAIRY

We have a milking parlour and dairy processing plant on the farm and we make our own cheeses, yoghurts and ice creams. Instead of dairy cows, we have a herd of over 200 dairy water buffalo! 

 

At Laverstoke we have a philosophy of producing the best-tasting, healthiest food.  Our animals may produce less but the quality is higher.

 Our natural water buffalo typically give 12-16 litres of milk per day compared with the 50 litre yield of some genetically manipulated holstein dairy cows.

However, the creamier, healthier buffalo milk is higher in unsaturated fats, protein and calcium but lower in saturated fats and lactose. 

 

The milk tastes delicious and it makes beautiful mozzarella, ricotta and pendragon cheeses and a superb range of unusual ice creams.

 We are also looking to increase our range of dairy produce so we are considering sheep for cheese production, and may be milking goats in the future as well!
