Dairy Unit
We are establishing an experimental dairy processing plant on the farm in order to make our own cheeses, yoghurts, butter and ice cream. We are aiming to supply milk from our different milking animals. We will also be aiming to provide raw, unpasteurised milk, as well as cheese made from raw milk and other raw milk products.
The processing unit has been designed, planning permission obtained, and we have already purchased some of the equipment.
At Laverstoke we are establishing our dairy herds following, as always, our philosophy of producing the best-tasting healthiest food. Our animals may produce less but the quality is higher.
This means we have chosen classic breeds such as Jerseys but also more unusual dairy stock such as Water Buffalo.
We are also looking to increase our range of dairy produce so we are developing herds of Lacaune sheep for cheese production, and hope to be milking goats in the future as well.
